Cold potato salad with herbs and pomegranate

Ingredients

  • pomegranate 1
  • parsley ½ bunch
  • coriander ½ bunch
  • mint leaves sprigs 3
  • potatoes, peeled, cut in small cubes 2
  • roquette coarsesly chopped Bunch
  • basil leaves 10
  • Juice from 2 lemons
  • Salt
  • Olive oil

Instructions:

Place potatoes on tray in oven and add oil and salt

Bake in preheated oven at 180c for 30 minutes

In mixing bowl, combine mint, basil, coriander, parsley and pomegranate seeds, potatoes, roquette, lemon juice olive oil mix well add salt and pepper as needed.
