Crispy potato salad

  • potatoes diced into small cubes 5
  • sweet potato, chopped into bite size cubes 1
  • cauliflower head separated into small pieces ½
  • snow peas coarsely chopped Handful
  • Olive oil
  • Salt and pepper


On 2 separate baking trays line with baking paper, place the sweet potato and potato, braushed well with olive oil.

Bake at 180 for 30 minutes, then cool

On stove top, cook cauliflower in boiling water for 5 minutes

Stir fry snow peas on hot pan in olive oil for 5-7 minutes

Combine all ingredients and mix well
