Crispy sweet potato salad

Ingredients

  • peeled sweet potato 1
  • peeled cabbage turnip 1
  • cucmber 1
  • peeled beetroot 1
  • Juice from 1 lemon
  • olive oil 4 tablespoons
  • Pinch of table salt

Instructions:

Using Julien peeler (Peeler with serrated edges), peel vegetables in longs strips

Mix the dressing

Olive oil, lemon juice and salt

Pour over the vegetable strips and mix well,

*Salad tastes best after 30 mins refrigeration
