Crostini potato with anchovies

  • potatoes washed Cut width wise into 1 cm. thick discs 3
  • anchovy fillets 4
  • Olive oil
  • butter 3 tablespoons
  • sour cream 1 carton
  • cherry tomatoes cut into ¼ 5
  • Chopped chives for garnish


Place the potato discs on baking tray line with baking paper, grease the potatoes with olive oil add salt and pepper bake for 35 minutes 180c.

On stove top, melt butter in pan and add anchovy, cool

When potatoes are ready remove from oven and arrange on serving dish on top of the potatoes add the buttered anchovies, a little sour cream, cherry tomato and garnish with chives.
