- potatoes cut into bite size cubes 4
- Olive oil
- coconut cream 1 can
- table salt Teaspoon
- curry 1 tablespoon
- spinach 3 cups
- garlic cloves sliced 3
- red chili sliced thin 1
Preheat oven to 180
Place potatoes on baking tray lined with baking paper, brush with olive oil and bake in preheated oven for 40 minutes.
On stovetop heat the coconut cream on a pan with salt, curry paste, garlic and chili for 10 minutes and turn off heat, add spinach and mix well.
Combine mixture with potatoes and serve.
