Potato boats with thyme and parmesan cheese

  • thyme sprigs chopped 2
  • Parmesan cheese thinly grated 50 gr
  • Salt and pepper
  • potatoes cut length wise 4
  • Olive oil


Heat oven to 180c

Arrange the potato boats on baking tray lined with baking paper, each half cut into 3-4 wedges.

Pour over olive oil, salt and pepper and bake for 40 minutes

Add parmesan cheese and thyme and bake for an additional 15 minutes until parmesan is browned.
