Potato Omelet

  • 8 ingredients


  • baby potatoes washed well ½ kg
  • Salt and pepper
  • double cream ½ container
  • melted butter 4 tablespoons
  • eggs 6
  • basil leaves chopped 5
  • smoked paprika Teaspoon
  • garlic powder ½ teaspoon


Add potatoes to pot of cold water and bring to boil for 25 minutes

Strain and heat oven to 200c.

Place potatoes on baking tray with baking paper and mash with back of pan to half the height.

Drizzle melted butter and season with paprika, garlic powder, salt and pepper

Place in oven for 20 minutes

In mixing bowl combine, cream, salt and pepper, basil leaves, eggs, whisk well

Grease muffin tin and place 1 potato in each cup, fill with egg cream mixture.

Bake for 10-15 minutes
