Potato pancake

  • flour 4 tablespoons
  • Salt
  • Double cream
  • Packet of baking powder 10 gr
  • eggs 2
  • Olive oil
  • medium potatoes 2


Heat oven to 200c

Wrap potato in foil and bake 40 minutes till tender

Transfer to mixing bowl add cream, eggs and blend in food processor

Add flour, sugar, baking powder and corn flour, mix well and leave to rest 10 minutes

On a greased heated skillet, pour batter and fry for 2-3 minutes
