Potato pie with smoked salmon

  • potatoes peeled and thinly sliced with the mandolin , length wise 5
  • butter 2 tablespoons
  • eggs 6
  • 1 pack of smoked salmon 5-6 slices
  • mascarpone cheese 6 tablespoons
  • double cream 250 ml
  • Bunch of chives chopped
  • Salt and pepper


Heat oven to 180c

For the pie base, use oven dish, grease with butter and arrange 3 layers of potatoes including the sides of the dish.

Cover with foil and bake for 30 minutes, remove cover and bake for another 10 minutes.

Mix together, eggs, double cream, chives and salmon together with the mascarpone cheese and pour into pie dish.

Bake for 25 minutes covered, remove cover and bake for another 10 minutes.

*Mandolin – a slicing utensil to evenly slice thin slices
