Potatoe Fan

  • olive oil 2 tablespoons
  • potatoes thinly sliced with mandolin 2
  • eggplant thinly sliced with mandolin 1/2
  • zucchini thinly sliced with mandolin 1
  • large Mozzarella balls thinly sliced 2
  • tomatoes thinly sliced 2
  • Basil (leaves only) ½ bunch
  • 100 gr Butter
  • Salt/pepper


Heat butter in frying pan until brown (approx.. 3 mins)

Butter a deep oven dish, arrange the vegetables and cheeses slices partially overlapping each other in a fixed order, potato, eggplant, zucchini, Mozzarella, tomato, repeat…

Sprinkle Atlantic salt over and the browned butter

Cover with foil and bake for 1 hour 20 mins

10 minutes before the end of baking remove foil and raise temp to 200c. until golden brown

Before serving garnish with Basil leaves and olive oil

*Mandoline – a slicing utensil to evenly slice thin slices
