Potatoes with chicken and vegetables baked in coconut

Ingredients

  • chicken thigh 2 pieces
  • potatoes cut in large cubes 5
  • carrots cut coarse 4
  • coconut cream 1
  • onions, peeled cut into quarters 3
  • leek coarsely cut 1
  • garlic head sliced in half width wise 1
  • olive oil 3 tablespoons
  • Salt and pepper

Instructions:

In a mixing bowl, combine all ingredients and mix well

Transfer to serving tray for oven, cover and place in preheated oven at 180c for 2 hours.

Remove cover and replace in oven for 20 minutes.
