- chicken thigh 2 pieces
- potatoes cut in large cubes 5
- carrots cut coarse 4
- coconut cream 1
- onions, peeled cut into quarters 3
- leek coarsely cut 1
- garlic head sliced in half width wise 1
- olive oil 3 tablespoons
- Salt and pepper
In a mixing bowl, combine all ingredients and mix well
Transfer to serving tray for oven, cover and place in preheated oven at 180c for 2 hours.
Remove cover and replace in oven for 20 minutes.
