Potatoes with spinach, onions and peas

Ingredients

  • potatoes peeled and finely diced 2
  • washed spinach 1 cup
  • onion, cut in half, peeled and sliced 1
  • peas ½ cup
  • butter 2 tablespoons
  • Olive oil
  • Salt and pepper
  • Juice from 1 lemon
  • Crushed garlic clove

Instructions:

Preheat oven to 180c

Place potatoes on baking paper on baking tray and pour olive oil over, add salt and pepper put into preheated oven for 40 minutes

In a nonstick skillet brown onions and garlic in butter

Add peas and spinach to pan add lemon juice and mix for 3-5 minutes. Remove from stovetop

Add to potatoes and fix seasoning (salt and pepper)
