Sweet potato and Maple syrup pancake

  • corn flour Teaspoon
  • flour 4 tablespoons
  • Salt
  • Double cream 250 ml
  • 1 packet baking powder 10gr
  • eggs 2
  • Olive oil
  • Maple syrup
  • large sweet potato 1
  • sugar 1 tablespoon


Heat oven to 200c

Wrap sweet potato in foil and bake until tender

Transfer to mixing bowl and add cream and eggs

Blend in food processor

Add flour, sugar, baking powder, corn flour, mix well and leave for 10 minutes

Pour batter on hot greased skillet, fry 2-3 minutes each side

Drizzle maple syrup over the pancakes
