Sweet potato cube with cinnamon

  • sweet potatoes, peeled, diced into bite size cubes 2
  • flour 2 tablespoons
  • ground cinnamon 2 teaspoons
  • Olive oil
  • Oil for deep fry
  • Egg
  • Panko/bread crumbs


Place sweet potato cubes on baking tray and bake at 180c for 20 minutes

Cool in fridge for 1 hour

Mix flour and cinnamon

Cover potato cubes with flour and cinnamon, transfer to bowl with whisked egg, then cover in bread crumbs, fry in deep oil
