Sweet potato soup

Ingredients

  • sweet potatoes, peeled and sliced into small pieces 2
  • leek, peeled and sliced small 1
  • carrots, peeled and sliced small 2
  • tomato coarsely sliced 1
  • celery peeled and sliced small 1
  • garlic clove 1
  • Olive oil
  • Salt and pepper

Instructions:

Fry the leek in in a pot with a little olive oil until caramelized. (light brown)

Add sweet potato, carrots, tomato, garlic and celery

Fry for additional 7-10 minutes add water bring to boil

Cook for 40 minutes from boiling, blend with blender add salt and pepper

*Serving suggestion: serve in soup bowls with double cream and chive garnish or black sesame
