The most perfect fried chips

  • potatoes peeled 8
  • Oil for deep frying
  • Table salt


Cut the peeled potatoes into strips (French fries)

Into a pot of oil (not boiling) at 160c fry the potato strips for 7-9 minutes, strain and them directly into ice water.

Strain and dry fries

Bring oil in pot to boiling temp. (around 190c) and fry the potato strips in small portions 5-7 minutes

Take out of oil onto paper towel, add salt
