- potatoes washed well 8
- butter 5 tablespoons
- garlic cloves crushed 2
- coriander ¼ bunch
- dill ¼ bunch
- red pepper diced into small cubes ½
- yellow pepper diced into small cubes ½
- synthetic vinegar 4 tablespoons
- Salt and pepper
- radishes chopped in small pieces 2
- Juice from 1 lemon
Combine together the butter, garlic, dill and bit of salt.
On a spread of foil place the potatoes and spread butter on each one
Bake at 170c for 90 minutes
Meanwhile, mix the chopped peppers, coriander, radish, and dress with vinegar, lemon juice, salt and pepper.
Open foil, and slice potatoes down the middle with a knife and insert a knob of butter into each potato, Generously garnish with chimichurri
